Chef Federico’s passion for food goes back to his childhood memories. Seeing the dedication and time being put in by his Nonna and Nonno to prepare fresh pasta inspired Federico to pursue a career in the kitchen.
His passion became his job. Working in a local trattoria he learnt the traditional recipes, but more importantly, what it means to be an Italian chef and the devotion and attention it requires. His career took him from the local trattoria to Michelin starred restaurant, where he learnt modern techniques and discovered the finest ingredients.
Wanting to learn more, Federico embarked on a journey to discover new ingredients, culinary cultures and cooking methods. Through Australia and French Polynesia, he ended up in Dubai.
Today his vision is to use all his experience and knowledge to create unique dishes that inspire and impress. Blending modern expression in cooking with traditional and authentic flavours, Frederico brings Italy to your table in a way you did not taste before.
